I think the best toppings for potatoes are bacon bits, chives, butter, sour cream and grated cheddar cheese. Potatoes are fat free and need fat to make them taste good. You could use reduced calorie sour cream and cheese on them to make them less high calorie. I've had potatoes topped with cooked broccoli and cheese and it was pretty good. Sauteed onion and mushrooms and are alright on potatoes with a little butter or margarine. I saw some commerical on TV where people were topping their potatoes with salsa and I tried it--I didn't think it the best tasting thing in the world but you might like it, and salsa has vitamin C and no fat.

Any of these, or some combinations - with low fat mayo: Tuna, Grilled Chicken Breast, Sweetcorn, Spinach, low sugar/salt baked beans, Beetroot & Carrot salad. The list is pretty endless - just think of low-fat stuff - and whack it on top of a potato!

You can try low fat cheese instead of regular to make it healthier instead of having to give up cheese completely. Also, any type of bean or chili is excellent, ground turkey cooked and seasoned with taco seasoning, braised cabbage, grilled/sauteed onions, roasted tomatoes/zucchini/asparagus, salsa, turkey bacon, cubed ham are all healthy options

Tuna is nice - try squeezing lime-juice into it along with lots of black pepper. You could put some chopped chilli in there too if you like it spicy.
