letting bread rise overnight?

Dear all

I'm organizing a picnic for a few dozen people in a few weeks time. I will be making for this several fresh loaves of homemade bread which I will prepare the night before. The only pickle is that I would want to make some fresh baguette and other crispy rolls as well and if they are not day fresh they go soggy which would be a real shame. Since I don't have the time nor possibility to make a dough from scratch the same day I was thinking about making my dough the night before and letting it rise over night so I would just need to pop it in the oven and be done. Since i have never done this I'm looking if any one could give me some pointers on how I get the best result this way

    put the prepped dough in the buttered pans and place in fridge over night. or you can half bake the loaves, rolls, whatever, and wrap them then refrigerate and finish baking in the morning. Either way works great!

    Where do you think the idea for Heat n Eat Dinner Rolls came from? they are nearly baked, but not browned, so we think of them as "fresh baked" even tho they may have been in our freezers for months, or in the fridge for several days!

    If you watch the oven closely, and bake breads just until they barely start to brown nicely, and remove them, they will reheat and brown very well whenever you get around to stuffing them back in the oven! Takes about 15 minutes or so to reheat and brown!!

    put your loaves in the fridge over night to slow down the raising.

    When you get up in the morning, take them out first, then turn on your oven, go get dressed, etc, In a short while they will be ready to bake.

    I do that often with a bun recipe I have so I can bake it in the early morning before it gets too hot out.
