I went horse riding in menorca. I had the same dillema, but i ended up taking combat trouser type things. A thickish material, but more manouvarable than jeans. Yes, its hot in those regions, but you dont really feel it much whilst riding to be honest. But it was a good feeling going back to the hotel and diving in the pool. Leggings may be a bit too thin, and you might feel some chafing. But they wont be toooo bad. Someone in our group wore shorts and he didnt suffer too much at all. Remember to wear a sunhat!
