I have a two-part question about canned fish. How come ... ?

How come canned tuna doesn't have the same texture as canned salmon and canned sardines (all canned in water)? How come canned salmon (in water) doesn't list water as one of the ingredients on the label, but canned tuna (in water) and canned sardines (in water) always do? These two questions have been bugging me for several decades.

    Texture depends on the canning method and tuna say in water because some is canned in oil. same with sardines.
