What to have with oven fried chicken?

I'm making my own healthy low fat recipe book for family meals (not to sell, just for my family) and i was thinking what can i have with oven fried chicken (which btw i have the recipe for) . I want something healthy yet nice and something other than salad please?

    Potato salad or mashed potatoes with cole slaw or collards are the usual accompaniment to fried chicken.

    Healthy substitutions would be Mashed Sweets (bake them first and just add little margarine) or Sweet Potato Salad and Broccoli Slaw.

    Sweet Potato Salad

    Serve 6-8

    5 cups cubed sweet potatoes (about 2-3 large ones)

    2 eggs (optional) I don't use the eggs and the salad tastes just fine.

    1/2 tsp dried thyme

    1 cup chopped green beans

    1 cup chopped celery

    1/2 cup diced red onion

    1/3 cup dark raisins

    1/2 cup non fat greek style yogurt

    2 tbsp fat free cream cheese

    1/4 tsp ground nutmeg

    salt and pepper

    1. Add diced potatoes, and eggs (whole) to stock pot. Cover with water, add thyme, season with salt and pepper and boil over medium high heat for 15 to 20 minutes until potatoes are fork tender. The eggs should also be hard boiled by then. At this point, add green beans to the pot for 30 seconds. Drain everything. Peel the eggs and chop finely.

    2. In a large mixing bowl, whisk together yogurt, cream cheese, ground nutmeg, and season with salt and pepper. Add all the cooked potatoes, greens beans and eggs along with the raw vegetables and raisins to the yogurt mixture and combine well. Refrigerate and serve.

    Ingredients

    4 slices turkey bacon

    1 12- to 16-ounce bag shredded broccoli slaw, most supermarket have this in the package salad dept.

    1/4 cup low-fat or nonfat plain yogurt

    1/4 cup reduced-fat mayonnaise

    3 tablespoons cider vinegar

    2 teaspoons sugar or 1-2 pkgs. Splenda

    1/2 teaspoon salt, or to taste

    Freshly ground pepper, to taste

    1 8-ounce can low-sodium sliced water chestnuts, rinsed and coarsely chopped

    1/2 cup finely diced red onion, (1/2 medium)

    1/4 cup dried cranberries

    Preparation

    1.Cook bacon in a large skillet over medium heat, turning frequently, until crisp, 5 to 8 minutes. (Alternatively, microwave on High for 2 1/2 to 3 minutes.) Drain bacon on paper towels. Chop coarsely.

    2.If using whole broccoli, trim about 3 inches off the stems. Chop the rest into 1/4-inch pieces.

    3.Whisk yogurt, mayonnaise, vinegar, sugar, salt and pepper in a large bowl. Add water chestnuts, onion, bacon and broccoli; toss to coat. Chill until serving time.

    Most of the times I would do spuds, one way or another so add them.

    Look at the types of other veggies that can be cooked along ride them. Like the spuds cut to a size that will cookin the same time space as the chicken.

    As many of them tend to have that roasted look colour think of veggies like carrot, peas or corn to brighten upp the plate when served.

    Also making a gravy, white or brown for the checken and veggies.

    Wilted Greens? Try this, its delicious!

    Get greens like spinach, silverbeet, rocket, watercress, young beetroot leaves and chop them up roughly. In a pan, add a tablespoon of olive oil. Once the oil is nice and hot, add 3 cloves of garlic. Smash them to extract more flavor. As the garlic begins to sizzle add the chopped greens and cook until slightly soft. Add a tablespoon or two of water, a dash of lime and season well with salt and pepper. Sprinkle some toasted sesame seeds for a bit of crunch. Serve hot.

    This goes really well with roast chicken or fried chicken.

    Oven baked apple slices

    Baked sweet potato slices

    Carrots, corn, green beans would all be good veggies in my opinion

    Fruit salad (i'm gussing though this is a 'salad' you meant more on the green & pasta etc salad)

    Rice & Beans, Carribean or Mexican style is what I would do

    salad or brown rice would be the most healthy choice

    and BTW, there technically isn't something called "oven fried chicken" if you are doing it in the oven, its called BAKED chicken, even if you put a crust on it.

    Veggies :) but try to steam it, steaming is the most healthy method and keeps all the nutrition in the food
