What kind of oil should I use for a deep fat fryer?

I have never fried anything in my life however my mom gave me a deep fat fryer to make my kids french fries. No one in our family is overweight so I thought I would save myself a couple of bucks a month to make them myself instead of buying McDonald's fries. I have no idea what kind of oil to use. My husband saw the fryer and said that he could make fried okra. What does okra look like? I have no idea what to buy at the store. He could get it (or them) but I'm going grocery shopping this week and would love to surprise him. Is it difficult to make?

Canola Oil is a good choice. It has a high smoke point which means, oils that do not break down at deep frying temps. I deep fry between the temps of ; 350 to 375. I have attached a recipe as well as a picture of Okra. They can be very yummy. I am a caterer and deep fry as much as I stir fry! Good luck.

You should typically use oils that have a high smoke point. Try not to use oils like olive oil, as they burn very easily. Your best bet would be things like peanut oil, canola oil/vegetable oil, or corn oil.

As far as the okra is concerned, that one is easy. Okra is sold in most grocery stores and is already cut up for frying. Just go to the frozen foods section and look with all the frozen vegetables. You should find it there. Then, just make a batter - here is a good one from Paula Deen: http://www.foodnetwork.com/recipes/paula-deen/frie...

Just put the oil in the fryer, get it good and hot. Then batter dip the thawed pieces of okra and drop them in the fryer and let them get golden brown.

canola oil is good for frying, due to its high smoke point. I believe its smoke point is around 450 degrees. This is the oil that most restaurants use to do their frying.
