I won't give a specific recipe as there are as many bread pudding concoctions as there are people. But basicially bread pudding is a lot of broken up bread pieces placed in a baking dish. Then a custard mix of heavy cream and eggs (you could use milk, I suppose) that is thoroughly whisked with sugar and spices or flavorings and then poured over the broken bread pieces until they're just barely covered. For New Orleans style, it calls for cinnamon, nutmeg and vanilla. Then it is baked off until the top is nicely browned and the custard is "set." It is served warm either with an accompanying sauce or ice cream.

There are also savory bread puddings in which you don't use sugar (as it won't be a dessert) and have flavors like chicken and pepper jack cheese, or beef and bleu cheese. Even savory bread puddings are best served with an accompanying sauce.

Things You'll Need for A bread pudding recipe

    •3 eggs

4-5 cups stale, dry French bread

    3/4 tsp nutmeg

    1/2 cup raisins

    3/4 cup sugar

    1 tsp vanilla extract

    2 cups whole milk

additional optional ingredients to put in bread puddings: raisins, chopped walnuts, pecans, chocolate in the form of cocoa, or chocolate chips, jam from the jar just spooned here and there. I think bread pudding can be quite forgiving.

    Instructions

    1

Cut the bread in cubes and place in a loaf pan.

    2

Beat the eggs in a bowl until frothy, then add the sugar, vanilla and nutmeg. Beat well.

    3

Beat in the milk, then add the raisins.

    4

Pour the milk mixture over the bread and toss together.

    5

Let soak for 30 minutes. While the bread soaks, heat the oven to 300 degrees.

    6

Bake for 45 minutes or until custard is set.

    7

Serve warm or cold, with whipped cream or ice cream.

I like to toss all my ingredients into the Crock Pot at bedtime. When the bread is good and soaked, I shove it down so there are no pieces sticking up. Those get really dry and tough. Right before I head to sleep, I put the Crock Pot on warm. When I smell the cinnamon and vanilla upstairs, it's done. I don't use a recipe, but any combo of sugar, milk and eggs will make some sort of custard. POur the custard over your bread and you're good. I like raisins, but Earl told me that there's no need for that sort of thing.

This is the recipe I use, it has sweetened condensed milk in it. The recipe is very easy and turns out great every time.

    BREAD PUDDING

    350°F

3 cups soft white bread cubes (4 slices)

    3 eggs

    3 cups warm water

1 (14oz.) can Eagle Brand sweetened condensed milk

    (not evaporated milk)

2 TBS margarine or butter, melted

    1/2 tsp. salt

    1 tsp. vanilla

    1 tsp. nutmeg

Preheat oven to 350°F. Place bread cubes in buttered 9-inch square baking pan.

In large bowl, beat eggs, stir in remaining ingredients.

Pour evenly over bread, completely moistening bread. Bake 45 to 50 min.

or until knife inserted in center comes out clean. Cool.
