In New York no one will be bothered by your daring to label California as "Cali."
In New York you won't be seeing any more tall mountains like the Sierras, the San Gabriels, or the San Bernardino Mountains.
In New York probably the only palm trees you'll see are the ones in the Winter Garden atrium of the World Financial Center.
In New York you get snow even when you're not in the mountains or elevated locations like the High Desert.
In New York you lose In N Out Burger and lots of fast food options, but you can try to compensate with Shake Shack, Five Guys, or mom-and-pop restaurants of different kinds.
The heat in New York won't be a dry heat as it is in much of California.
The motorists of New York City and SoCal will drive with similar habits, but you'll hear a lot more honking in New York.
Couldn't tell you about the schools in New York. As for the differences between the people in both places: eh, not too different if you're considering all the different kinds of people to be found in both locations. But the East Coast is increasingly looking and sounding like California due to increasing numbers of Latino and/or Hispanic folks across the country; meanwhile, the word "Spanish" is commonly used to refer to many of these folks though this isn't so common in California. Plenty of Italians in CA and NY, but the presence of Italians is more noticeable in NY. More Dominicans and Puerto Ricans in NY than in CA. Different regional accents too, of course.
Favorite thing about New York State: NYC.
Favorite thing about New York: it's one of the few places in the East Coast worth spending a lot of time at.
Least favorite thing about NYC: I dunno. If I lived in New York it would probably be the cost of living there.

Schools are expensive and big in both. I never noticed a large difference as far as clothing or fashion; but while there are different types and styles of clothing in both states, you find more options in New York. The people are different in New York than California; there is a large difference in ethnic and background diversity between the two. New York has a far larger diversity of people there.
Favorite thing about New York: The parks and the fun activities.
Least favorite thing about New York: The awful traffic (Though I'm sure as a Californian you're familiar with that, lol).

In California you have Beverley hills of course, the beach, nice cars, and people wear shorts and t-shirts because it's sunny all the time.
