Why do you need to heat up water to steep tea?

I make green tea every morning and I fill up my pitcher with cold water and 6 fresh green tea bags and throw it in the fridge for the next day. It steeps fine and tastes like tea. What's the purpose of heating up the water first?

    You don't NEED to steep tea in hot water, however, you will get the best flavor results from green tea if steeped for about 3 minutes in 180 degree water. Different types of tea's release their best flavor at different temperatures and steeping times.
