How to cook for a diabetic.?
My boyfriend is diabetic. I need some ideas for side dishes when he comes over for dinner. I know the bright colored vegetables are best but what about a substitute for potato or rice? I could really use some ideas and/or recipes. Thanks!

Cauliflower and celery root (celeriac) make excellent substitutes for potatoes. You can even combine the two. I have several recipes on different ways you can prepare them:

(In this recipe, I'd use heavy cream instead of milk - richer flavor, lower in carbohydrates. I'd also skip the potato and use more celery root or some cauliflower.)

For rice, I actually grate cauliflower in a food processor raw and then fry in oil. It's not a perfect substitute, but with soy sauce, sesame oil, green onion, egg, and shrimp, it's pretty darn tasty.

What you eat is not actually the cause of diabetes, but how you live can be. If you sit on the couch all day, your chances of developing diabetes goes up greatly.
Just do the best you can to not gain weight and to maintain an active life style and that will greatly help reduce some of your risks.

Just make a regular well balanced meal.
Steak, baked potato salad and fruit for dessert.
Or Baked chicken with grilled veggies and corn on the cob and some brownies for dessert.

Diabetes is usually treated through a combination of diet (low sugar), exercise and medications/insulin. Milder cases can be controlled with just diet an/or exercise while more severe cases require meds or insulin as well.

Don't go by color alone. Carrots, for instance, are bright orange but are high in carbs (1 med. size carrot = 15 g of carbs which might be 1/3 the total amt of carbs allowed in one meal, just for one carrot!). He can have rice, pasta, potatoes, just in limited amounts (like maybe 1/2 cup), and make it the less processed kind, it won't give him a glucose spike plus will add fiber to his diet which helps. I tend to always eat a good size salad with my meals, helps to fill me up plus I just love the crunchy, freshness--not just lettuces, try putting raw baby swiss chard, bok choy, turnip greens, spinach, other greens you'd normally cook (the baby leaves are tenderer) in the salad to give it a vitamin boost and a taste boost too. And I then have cooked veggies with my meal too. One 6" corn tortilla is only 9 g. of carbs (flour tortillas have 28g). 1/2 cup of pasta/macaroni is 18g. Generally, if he has a taste for something he can eat it but just keep the amount to a minimum--not a huge bowl of spaghetti unless he wants to adjust his insulin (if he's taking it) or is willing to have the glucose high. Plus he needs to test his blood to see what foods are kinder to his blood glucose. I can eat half a baked potato with no problem, same with about 1 cup of spaghetti (with olive oil). I can eat rye bread so that's what I buy. But rice, any rice in any amount, shoots my glucose up (and sometimes I just need to eat rice so I deal with that rise). I can do corn meal as long as there isn't any flour added (so no pre-packaged corn bread mixes; I just add some water or chicken broth to the corn meal and make a mush (add cheese as I feel). But your bf may react differently.

I am type 2 diabetic and eat normal healthy meals and I eat potato's and rice. The only thing I cut down on is fatty meats and junk food and not too much bread. Any basic healthy meal can be eaten just not the sweet or puddings very often. Good Luck
