Salsa / Hot Sauce creations?

My wife and I have grown and sold hot peppers for a few years now, as well as used them in home cooking. We'd like to explore salsa and hot sauce that's marketable, but there are thousands on the shelves. Any advice as to how to make ours stand out and / or how to really cook up the tastiest stuff is greatly appreciated.

    More of a chore, but instead of cooking it and bottling it, how about selling it fresh n the refrigerator section of stores?

    That way, you can use fresh cilantro, fresh lime juice and toast your cumin. The flavor can be much more robust and fresh is soooo good. Pop in a chopped mango or a chopped ripe peach or some pineapple for something a bit different. I always vote for fresh myself. It is hands down, better.

    You have to go far out. Try combinations nobody else does EG peach and corriander salsa
