I need a good chicken salad recipe?

I cooked a whole chicken in the crockpot yesterday. Its only seasoned with salt, pepper, and paprika. we ate the drumsticks and wings and I'd like to make chicken salad with the rest. I don't really have a recipe to speak of but I can pick up any needed ingredients. Thanks so much for your help.

    Waldorf Chicken Salad

    Ingredients

    1/2 cup chopped walnuts

    3 cups chopped cooked chicken

    1 cup seedless red grapes, halved

    1 large Gala apple, diced

    1 cup diced celery

    1/2 cup mayonnaise

    1/2 cup honey mustard

    Salt and pepper to taste

    Preparation

    1. Preheat oven to 350°. Bake walnuts in a single layer in a shallow pan 6 to 8 minutes or until toasted and fragrant, stirring halfway through.

    2. Stir together chicken, next 5 ingredients, and walnuts. Add salt and pepper to taste.

    Honey-Chicken Salad

    Ingredients

    4 cups chopped cooked chicken

    3 celery ribs, diced (about 1 1/2 cups)

    1 cup sweetened dried cranberries

    1/2 cup chopped pecans, toasted

    1 1/2 cups mayonnaise

    1/3 cup honey

    1/4 teaspoon salt

    1/4 teaspoon pepper

    Garnish: chopped toasted pecans

    Preparation

    1. Combine first 4 ingredients.

    2. Whisk together mayonnaise and next 3 ingredients. Add to chicken mixture, stirring gently until combined. Garnish, if desired.

    Cha-Cha Chicken Salad

    Ingredients

    1 (8-oz.) package cream cheese, softened

    1 cup mayonnaise

    2 teaspoons curry powder

    1 teaspoon salt

    6 cups chopped cooked chicken

    1 (8-oz.) can crushed pineapple

    2/3 cup orange-flavored sweetened dried cranberries

    1 cup chopped roasted, salted almonds

    Garnishes: fresh herbs, blackberries, raspberries, sliced peaches

    Preparation

    1. Whisk together cream cheese and next 3 ingredients in a large bowl; stir in chicken, pineapple, and cranberries just until blended.

    2. If desired, spoon mixture into a plastic wrap-lined 8-inch round cake pan; cover and chill at least 8 hours or up to 24 hours. Invert chicken salad onto a cake stand, and remove plastic wrap. Gently press chopped almonds onto sides of chicken salad. Garnish, if desired.

    Applebee's Oriental Chicken Salad

    Prep Time: 20 mins

    Total Time: 28 mins

    Ingredients

    Oriental Dressing

    3 tablespoons honey

    1 1/2 tablespoons rice wine vinegar

    1/4 cup mayonnaise

    1 teaspoon Grey Poupon Dijon Mustard

    1/8 teaspoon sesame oil

    Salad

    1 eggs

    1/2 cup milk

    1/2 cup flour

    1/2 cup corn flake crumbs

    1 teaspoon salt

    1/4 teaspoon pepper

    1 skinless chicken breast halves

    2 cups vegetable oil ( for frying)

    3 cups chopped romaine lettuce

    1 cup red cabbage

    1 cup napa cabbage

    1/2 carrots, julienned or shredded

    1 green onions, chopped

    1 tablespoon sliced almonds

    1/3 cup chow mein noodles

    Directions

    Preheat oil in deep fryer or deep pan over medium heat.

    You want the temperature of the oil to be around 350 degrees.

    Blend together all ingredients for dressing in a small bowl with an electric mixer.

    Put dressing in refrigerator to chill while you prepare the salad.

    In a small, shallow bowl beat egg, add milk, and mix well.

    In another bowl, combine flour with corn flake crumbs, salt and pepper.

    Cut chicken breast into 4 or 5 long strips.

    Dip each strip of chicken first into egg mixture then into the flour mixture, coating each piece completely.

    Fry each chicken finger for 5 minutes or until coating has darkened to brown.

    Prepare salad by tossing the chopped romaine with the chopped red cabbage, Napa cabbage, and carrots.

    Sprinkle sliced green onion on top of the lettuce.

    Sprinkle almonds over the salad, then the chow mein noodles.

    Cut the chicken into small bite-size chunks.

    Place the chicken onto the salad forming a pile in the middle.

    Serve with salad dressing drizzled over it or on the side.

    Go to allrecipes.com and search for Black Friday Turkey Salad. Substitute the chicken for the turkey. It's the best recipe I've ever found for a chicken/turkey salad. It has bacon and cheddar in it too. Try it, you'll fall in love with it like I did.

    Mine is really simple, but tasty.

    Mayonnaise, Dijon mustard (just a little), chopped green onion, finely diced celery, a clove of garlic, and sometimes I add pecans. Season to taste (salt, pepper, cayenne, thyme, whatever you like).
