Brown Bag Apple Pie Recipe Help?.....?

I have the most amazing recipe for an apple pie that is baked in a brown paper bag. Although I love the pie, I HATE baking it in the paper bag. It makes my kitchen smell like charred wood.

What will happen if I don't use the paper bag? Will the pie still brown and be moist?

I think the only thing that would be different is that the texture will be a little bit crunchier, as the steam won't get caught in the paper bag, and so it won't trap the moisture. You should probably also keep a closer eye on the cooking time - it will probably bake quicker without the bag.
