Alternatives to Peanut Butter for Cooking.
Whether you're concerned about peanut allergies or simply looking to try something new, you can substitute a variety of legume and nut butters for peanut butter in your recipes. Many have consistencies and nutritional makeups that are similar to peanut butter, although they tend to be higher priced. Because these spreads aren't identical to peanut butter, they may perform differently, even if only sightly, during cooking. When substituting, use equal amounts.
Soy Nut Butter
This legume butter, which comes in creamy and crunchy varieties, is created from whole soybeans that have been roasted, then ground to a spread-like consistency. Soy nut butter contains less saturated fat than peanut butter, although the two foods are similar in texture. They're also similar tasting, which is good news for those with peanut allergies -- soy nut butter is a commonly used alternative for individuals with both peanut and tree nut allergies. Substituting soy nut butter for peanut butter in a recipe will cause the resulting product to have a higher amount of protein.
Sunflower Seed Butter
Another option for individuals with nut allergies, sunflower seed butter is rich in an array of minerals and protein. Sunflower seed butter has a grayish color and is higher in polyunsaturated fats than peanut butter, which means it often goes bad more quickly than peanut butter.
Almond Butter
Almond butter contains more fiber and calcium than peanut butter, although it has less protein per serving. From desserts to sandwiches, almond butter is a good substitute for peanut butter because of its sweet taste and creamy texture. Because almonds are tree nuts, this nut butter is not suitable for those with tree nut allergies.
Cashew Butter
Instead of a day-to-day substitute for peanut butter, cashew butter might be better used as an occasional treat. This is because it contains more saturated fat and less protein and fiber than peanut butter. It also has a tendency to be more expensive. As with almond butter, cashew butter shouldn't be consumed by individuals with tree nut allergies.
Additional Nut Butters
Commercially prepared butter-type spreads are available in almost every tree nut, from walnuts to hazelnuts to Brazil nuts. Some are harder to find in stores than others, although health food and organic grocery stores may be more likely to carry them. Additionally, anyone with a food processor can create their own nut butters at home. These nut butters won't remain edible for as long as commercially prepared nut butters, however, since homemade butters lack preservatives. The American Dietetic Association estimates that homemade nut butters have a refrigerated shelf-life of up to a month.

Peanut butter has its own very unique consistency and flavor. You can try all kinds of things but there is no real substitute. If you are allergic to peanuts then find a different recipe or don't eat what you cook.
Sorry

butter, margarine or shortening or even lard
I recommend either you find a different menu or don't eat that! I cook and serve a lot of foods I can no longer eat. I make sure I have a grand salad so that I can avoid having all of the heavy starchy carb foods everyone else seems to think are necessary.
