When should I text her again...?
I texted this girl and asked her if she wanted to have lunch some time. She responded yes when she can find some free time in her schedule. (were both in college) This happened on Sunday, its now Wednesday when I'm typing this. When can I ask her again to meet up (don't want to appear desperate). Would this Friday be too soon, or should I wait another week.

Just say, "Hey, I was wondering if you still want to go have lunch sometime...unless you're busy" or something along those lines. Trust me, you wont sound desperate if you say something like "unless you busy". Hope I helped :)

The timing of your text doesn't matter. As long as you have something interesting to say, text away.
Don't just text her, hi or hey. Girls are easily annoyed by texts with no thought process. It's like getting an ugly sweater for Christmas.
Send her a "radar" text that lets her know you're alive and thinking about her. Make it funny or interesting.
Most importantly, try to get her out in the next text conversation you have with her. You do wanna see her, right?
No need to play games when texting. Be interesting, ask her out and build your relationship.
