What happened to my cookies?
I made a pumpkin cookie off of allrecipes.com, they are kind of like a little miniature cake. Anyway, I let them cool for a couple of hours (after I had put the icing on them per the recipe) and put them in my cookie jar... now they are all soggy (still taste good though). What happened? How (if possible) can I remedy this? And what should I do in the future to keep it from happening again?
Any tips or help would be much appreciated. I would hate to waste such good cookies for a rookie mistake. :D
No it wasn't a cream cheese frosting. It was an icing made with butter, brown sugar, powdered sugar, and vanilla. The icing was hardened and the whole cookie was cooled when I put them in the cookie jar.
That explains a lot. The recipe called for 10 minutes of bake time at 350F. They didn't look or feel done so I baked them for 15 minutes, but not longer because it was the first time making these and I didn't want them to burn.

Pumpkin cookies are supposed to be cake-like, so you made them right. Let me guess, you have a cream cheese frosting too. They probably weren't thoroughly cooled. I would try laying them out on cooling racks if you have them for a few hours, maybe even over night to let the air get at them. The cream cheese frosting be fine.

It sounds to me as if they were not in the oven long enough . Most pumpkin cookie recipes require 22 - 25 min. of baking time . This is of course you did let them cool completely to room temperature before storing them in a container .
You see if they were not baked long enough and then cooled and place in a container there will be a gathering of moisture within the cookie . When you remove them do they look , well like wet and extra soft . Then yes this is the problem because after the heat is gone , the unbaked part will disperse the moisture to the dry area . This gives it a mushy look or soggy look .
Basically check and watch your bake time . If you can find me on facebook , you will see some photos of pumpkin cookies that have been baked for the amount of time I have just suggested !
Just read your edit . A good rule of thumb is to look at the cookies to see a darkened golden color around thwe edge of the cookies . Also on all cake like cookies , if you are unsure if they are done ; lightly press top of cookie with your finger , the top should spring back .

After frosting them, did you let them dry again? if not, then that caused it to happen. Next time, I let them dry and put in the refrig. layer by layer.
You might want to freeze 1/2 of them and keep the rest out to dry. Then, when you want cookies, take 3 out at time and thaw and eat that day.
