Unconvential Christmas Dinner?

Usually, I'm the one answering recipe questions on Yahoo! Answers... but I need a little help with this one. I was looking for a different idea for Christmas dinner this year besides the same old ham or turkey with mashed potatoes and stuffing...

I am making a marinated pork loin with a baked macaroni and cheese, stuffed potato skins, grilled shrimp, baked asiago broccoli, a Caesar salad, garlic biscuits, and deviled eggs. My question is, I want to also make stuffed mushrooms (which I've never made)-- I need a recipe that will pair well with the meal. I'd like to make something using portabellas but any type of mushroom will do. :)

Thanks in advance from one cook to another!

Update:

Perhaps, I should be more specific... I was not going to serve it all at once. The salad, eggs, shrimp, and stuffed mushrooms are for before the meal...

I'm feeding a family of five-- not entertaining a house full of etiquette critics. I doubt anyone will be too frazzled if I did decide to serve it all together.

Just looking for recipes. Not criticism on my menu choice. A recipe that pairs nicely with my menu would be wonderful. Thanks in advance. Again.

    Stuffed Portobello Mushrooms

4 (6-inch) portobello mushrooms (stems remove and set aside)

    EVOO

1 cup finely chopped bell pepper (red, yellow or green)

    1 cup finely chopped onion

1 cup breadcrumbs (homemade, fresher and cheaper)

1 cup grated fresh parmesan cheese

    ½ cup grated mozzarella

½ cup of chopped mushroom stems (since you already have

¼ cup minced garlic (yeah I know it’s a lot of garlic but I love garlic)

    ¼ cup chopped parsley

    ¼ tsp teaspoon salt

    ¼ cup teaspoon black pepper

    Preparation

    Preheat oven 350-degrees

Combine all ingredients. Mix in EVOO to give the breadcrumbs a little moisture.

Place mushrooms on baking sheet. Sprinkle insides with a little salt.

Spoon mixture evenly into the 4 mushroom caps.

Bake 20-30 minutes or until top is crispy.

I don't know much about an unconvential Christmas dinner, but I can come up with an UNCONVENTIONAL Christmas menu.

Stuffed mushrooms: Clean large white button mushrooms of the horse manure they grow in, trim and remove stems, in food processor place breadcrumbs, stems, grated parmesan, minced onion, fresh parsley, pepper, garlic, and olive oil. Pulse until coarsely chopped. Stuff mushroom caps with mixture and place on Pam sprayed tray. Bake until browned lightly. Don't use portabellas, too tough.

Forget the biscuits, make popovers. Easier and everyone likes them.

It seems you are all over the map, serving appetizers with the entree. Too sloppy. The deviled eggs and an antipasto tray would be nice first, maybe with chopped liver and crackers or lox with crackers. And the shrimp.

Then serve the salad. Or skip the salad.

Then serve the loin with your starch and vegetable with bread.

    Fruit, nuts.

Coffee. cake. ice cream or gelato.

This mushroom recipe is THE BEST. They get gobbled up every time i make them.

    20 medium white muchrooms.

    1/2 cup butter

    8 oz cream cheese

    1 teasp. chopped parsley

    1/3 - 1/2 cup Kraft grated parmesan

    2 T milk

    garlic powder

    salt to taste.

    1/8 teasp. paprika

Clean shrooms and remove entire stem. Place on cookie sheet and pour the melted butter over. (yes - its a lot of butter). Make sure butter gets inside the caps. Mix remaining ingredients and stuff each shroom lightly with mixture.

Bake 10 mins at 350 or til a little brown on top.

You won't be disappointed. Allow maybe 4 or 5 per person - depending on how much else you have for apps.
