How to get rid of aftertaste for red velvet cake?

Is there any ingredient that would offset whatever gives red velvet cake that typical aftertaste? I'm guessing it's the food coloring. I guess I can add more cocoa to offset it, but I want the batter to remain red.

    Add a splash of lemon juice just before you put the batter in the oven- it works and gives the final cake a more rounded taste.

    I think you are right. I think red velvet cake is beautiful. It's not my favorite. Cocoa is already bitter then you add the food coloring that's also bitter.
