What side goes with meatloaf?
I'd like to know what side I should cook with meatloaf. Generally we don't have anything else.

Potatoes are one of the most popular side dishes served with meatloaf. You can prepare them in many different ways. A lot of people just make mashed potatoes. You could also mix in bacon, sour cream, broccoli, butter, salsa, and onions to created loaded mashed potatoes. It would be just like a loaded baked potato but in a different form. Roasted potatoes with butter, garlic, and parsley or chives are simple and delicious as a side dish. Even regular baked potatoes with butter are good.
Macaroni and cheese is something else that we eat with meatloaf. You can either do a baked version or just use the boxed mix. We even make it on the stove sometimes and create a cheese sauce using milk and velveeta cheese.
As far as vegetables go, you can serve pretty much anything. We like to steam our veggies and add Italian salad dressing after they are cooked for a ton of flavor and to take the boring out of the vegetables. Our favorites include broccoli, cauliflower, sugar snap peas, and red beets. You could also do creamed corn or asparagus or brussel sprouts.

Despite the fact that others have already stated it. Excellent mashed potatoes and whole kernel sweet corn. However to take that meatloaf over the top, take probably the most fat that the meatloaf exudes and make a excellent gravy. Take the fats and put it in a pan with flour and make a roux. Use a low sodium beef broth as your liquid. Sprinkle in some powdered garlic, thyme and a percent of nutmeg. Salt and pepper to your liking. The exceptional gravy comes from the fats of the meat you simply made.
