Truck seems to skip on highway?

My 1997 ford f250 HD 5.8 seems to skip only when im driving on the highway up hills. Im not sure if its a tranny problem or an engine problem but its weird. It doesnt happen when driving on a normal street but when i get on the highway and there is a hill you can feel the whole truck sort of jump until you get back on level ground. I just noticed the problem when i put my snow plow on the other day.

Update:

Tires are brand new

    Fuel pump or filter.

The hardest job for a fuel pump is supplying enough gas for climbing hills.

The weight of the plow makes it even harder.
