I think Stone Cold would win.
Although Hogan in his prime was virtually unbeatable, Stone Cold had a heart of a warrior. He would also absorb the punishment Hogan gave him. In the end, Hogan would miss his second Leg Drop and Austin would hit his third Stone Cold Stunner to win the match.
Austin was never unbeatable, but he's so tough and his will to win is too big. Austin's just simply too tough for Hogan to overcome. Austin can even beat The Undertaker cleanly in two different occasions at Summerslam 1998 and Raw 1999. That alone proves how tough Austin is.

That's a fantastic one but as one person mentioned Stone Cold vs. CM Punk will be awesome and I agree with that. Stone Cold vs. Brock Lesnar is also one of my dream matches.

undoubtedly the hulkster; and as @max rayner stated; "austin himself wanted to face hogan sometime around early 1998 when austin was at his peak but due to hogan's fallout with vince relating some illegal steroid issues in 1994 (as far as i remember);it led to hogan breaking off from vince's legal bondage;thus hogan departed during end of 1993 or beginning of 1994"!!!
