Flags During The Crusades?

The Knights Templar fly the Beauceant, which is half black, half white - sometimes with a red cross, most times without it.

The Armies of Jerusalem flew a white flag with five red (or blue) crosses on it (one large cross, surrounded by four smaller crosses). This flag is the blue/gold one in the film.

The Knights Hospitaller wore black mantles with white crosses, this - supposedly - is where the black flag with the white cross came from in the film.

The Teutonic Knights banner was a white background with a black (or black & gold) cross on it.

The Knights Templar were, primarily, a mounted force with heavily armored (and battle trained) war horses. They did, however, require a great deal of maintenance, and therefore the knights travelled with an entourage that consisted of squires, marshals, standard bearers, sergeants, drapers, blacksmiths, hippiatrists (someone who takes care of horses, not hippies), cooks, and so on. And they weren't all mounted, but they could all be called into battle.

Flags - official ones - are formally registered along with coats of arms (even those of families). There are books on 'heraldry' with depictions of various symbols used by various people in specific eras and circumstances. Look to see if there are any such works you can peruse at a local library. There may even be some which relate specifically to the Crusades.
