Take a 1/3 cup all purpose flour, 1 egg, 1/4 to 1/3 cup of water, and your desired seasonings (you need to add quite a bit of seasonings to get a good flavor for you to taste) (for a twist add a little lemon juice!) and mix well. (Should be a nice semi-thick liquid) dip tilapia into batter, then dip into another bowl of all purpose flour (seasoned, I use pepper, garlic powder, onion powder and a few dashes of cayenne or paprika) bake in oven at 325 for about 20-25 minutes or until crisp to your liking. Bake on wax paper or parchment paper.

Mango Salsa from PaPa O's Restaurant in Capitola, Ca. 2 soft mangos peeled and chopped 1 jalapeno pepper, seeded, then rough chopped. wear gloves when doing this. 1/2 avocado chopped into 1/4 inch squares 1/4 red bell pepper chopped 1/4 red onion chopped 2 tablespoons honey juice of 1 lime 1 tablespoon cider vinegar cilantro to taste Combine all ingredients in a cuisinart and pulse to blend, but not to puree. There shoul be some chunks remaining. You can also use a fork to mash the mixture. Serve this mixture on the side and not on the fillet itself. I would also use a risotto instead of angel hair and serve with braised asparagus and sesame seeds. Fish sounds good!

Tilapia is rather delicate-it's better to broil it. A brush of olive oil, any herbs you enjoy, a little salt and pepper. Under the broiler for about 5 minutes a side, serve with wedges of lemon.

try baking it.
prepare the fish and stuff the body cavity with parsley, thyme, dill or whatever herb you fancy , (nothing too strong, lay it on a sheet of foil, add salt and black pepper, make a foil purse around the fish and add half a cup of milk, bake for 40 minutes in a moderate oven.
delicious
