Cafes do not generally have waiters. You usually are meant to go to the counter and order for yourself.

It is not uncommon for people to just sit at a cafe and talk, so they probably did not pay any attention to you.

It takes time for the cafe because they may make the food specially fresh you know because of critics and really it is a hygienic place. You know i think it is worth the wait sometimes because you the the best you can get. In other times there might be a waiting line or a crowd . It is not easy to handle a cafe.

You could try suggesting them to improve.

Cafes or cafeterias, normally do not have waiters who take your orders and serve you. These are self-service outlets, i.e., you go to the counter, pick up whatever you need, pay for the same, find a suitable place to stand/sit, eat and leave the place. The present day cafes are more of places for social meetings and less of places for eating/drinking.

there are a lot of places that don't have servers. just my opinion, if i went somewhere and was expecting service and didn't get any within about 5 or 10 minutes i would go to the front and bring it to their attention. why would you sit there for an hour and a half without saying anything if it was bothering you?
