Well you are a month early for Pascha , but it IS Easter for us heretics out here on Europe's fringe .

I vote for Mageiretsa , slow-roasted Lamb all stuffed with Herbs and Garlic , Lemons in quarters all round the big serving plate , Greek salad on the side , SpanakoRizi , nice bottle of chilled retsina to wash it down . That is my plan for 5th May , anyway .

On Sunday I have a big pot-roasted joint of topside of beef , that is smothered in Dijon mustard , seasoning and spice and is marianating in the slow-cooker now , ready to be switched on tomorrow morning , for munching tomorrow night - Lemony potato wedges done in the oven , and a cauliflower with that , and a bottle of something simple and red from southern France , which you can taste the sunshine in .

Kalo sas Pascha , padia !

it is strange that you celebrate Easter along with the Western Christian denominations. Anyway, ΧΡΙΣΤΟΣ ΑΝΕΣΤΗ και να εισαι παντα καλα με υγεια.

We are still in the SARAKOSTI and Easter is in a full month away.

Magiritsa avgolemono is my all time favorite for the table after the ANASTASI and the special way we do it here in Corfu. Since, for many years now, I'm in full charge of the ingredients needed for it, my preparation of them starts sometimes from Friday night or early Saturday. A very thorough cleaning that takes hours and hours guarantees on my mind that everyone will have the best possible food.

For a few years back now I also make patsa along with it which we eat it on Sunday morning.

Come Sunday morning, I prepare the lamb on the spit on which I also twine some intestines which give it an extra flavor.

Soon after the lamb, kokoretsi is prepared the classic way, that when done is about 2 to 2 1/2in.thick.

No the ordinary over 5 in. thick, sold in grill shops. That usually is consumed long before the lamb is ready, by the side of the spit fire, with friends and relatives. And a lot of drinks.

Usually roasted potatoes and different salads are the accompanying plates on the Easter table. But everyone favors the lamb.

Ohhhhhhhhhh shrimp scampi! like it with Alfredo noodles and asparagus. For Easter even if it truly is in lots of situations the comparable ol' ham, candy tators or potatoes augratin, eco-friendly beans or asparagus and salad. My well-liked Easter candy is those chocolate eggs which you injury and on the interior is the creamy filling. i'm having a senior 2nd and can't think of of the call...made via Cadbury's candy.
