Your favorite vegetarian dinner?

I have a few that I really like, but I've exhausted them, it seems. Not everyone in my family is a vegetarian, so I need something to serve that would go over okay with the omnivores. But on the up-side, we're all pretty open to varying ethnic flavors.

What is/are your favorite vegetarian meals to serve your family?

Ok, so, not to sound picky, but...

For the VEGETARIANS out there, what are your favorite MEALS to make for your family?

I have a great vegetarian chilli that I love as well as Indian potato curry, west African stew, and a few other really hearty meals that fill everyone up and pack a lot of flavor. And I love chickpeas! They pretty much go in everything that I make.

    Aloo Mutter. My favorite Veggie dish. Indian cuisine has a wide selection of veggie meals.

    The Joy of Cooking Vegetarian cook book has a lot of recipes I like. My favorite is the one with tempeh that you marinate and then put in a peanut sauce and serve with raw vegetables and rice noodles. To me, the tempeh has a very satisfying texture (I'm not vegetarian).

    I also love vegetables over pasta. When I have had to cook for both my vegetarian husband and other people who are NOT vegetarian, I have made (for example) pasta with pesto and a roast chicken. The pasta is the main dish for the vegetarian and a side dish for the chicken eaters.

    If I don't eat meat, then it generally doesn't feel like a meal. Exceptions are avocados and anything hot and cheesy, like lasagna or cheese pizza. Also, a guy took me once to this veggie Chinese place, and I was really shocked at how good the meatless chicken was. I don't know what it was made of, but it was delicious and very satisfying. I've had some good veggie burgers too, not tofu burgers, but patties made of a number of veggie ingredients. When it's in burger form and has some flavor, it can be a great meal even without the lettuce and tomatoes, at least for me.

    I like to make a spicy Thai peanut pasta dish with lots of veggies. It's delicious. It can get a little hot for some people though.

    I'm not a vegetarian but I enjoy Miso Soup.

    EDIT: Why the two thumb downs. Miso Soup is a vegan meal. Vegetarians and vegans aren't too different. You never said only vegetarians. You said "Your favorite vegetarian dinner".

    Use boca and make some yummy tacos! I love having taco night with my family. It can be really fun and interactive. Also try pasta night with different sauces and toppings. :) Same with pizza. Just have fun!
