I would say: The library was open all day Monday through Saturday and from 1:00 PM to 5 PM on Sunday. Except there must be set hours for Monday through Saturday, maybe 8 am to 8 pm, for example. That would read: The library was open from 8:00 AM to 8:00 PM Monday through Saturday and from 1:00 PM through 5 PM on Sunday. Good luck.

I'm also an English student but I'd say:

The library [is] open the entire day [from] Mondays to Saturdays,

on Sundays, from 1:00 PM [to] 5:00 PM
