Need help with Mother's Day menu please?

I will be cooking for about 9 people on Sunday and so far all I've come up with is a cheese plate...The only things I can't include in the menu are beef or cream cheese. Any ideas for what I could make for the group? Thanks!!

    Easy Chicken Tetrazzini

    1 lb chicken or a whole chicken cut up (or a store bought rotisserie chicken)

    1 lb spaghetti

    1 small box velveeta cheese

    4 oz cream cheese

    1 can hot rotel tomatoes

    1 can cream of chicken soup or 1 cup sour cream

    ¼ cup shredded cheese

    In a large pot of boiling water seasoned with salt, pepper, garlic power and onion powder place (or use fresh garlic and onion minced) place chicken and cook gently until done (about 20 minutes)

    Remove chicken from water (reserve the water) and return water to a boil.

    Add pasta and cook until aldente

    Cool chicken and cut into bite size piecesIn a small pot put soup, cheese and Rotel and melt slowly together

    Drain pasta and place in a large casserole dish and mix in chicken and cheese mixture. Sprinkle shredded cheese over top. Bake at 350 for about 10-15 minutes til bubbly and serve with some crusty bread. This freezes exceptionally well so make a double batch and freeze one without baking. When cooking later be sure to defrost before baking

    I've got an idea!

    Psoas major muscle of pork, wrapped in bacon.

    Salt baked onions

    Potato mash with fennel

    Sauce

    baked vegetables

    This is quite an easy dish to make, its super good, and is perfect a dinner with many people.

    Wrap the pork in bacon and use twine to wrap it up, and fry it in a pan, until the bacon is golden brown.

    Then put the meat in the oven at 180 degrees, for about an hour or so. Boil water and add the potatoes. When they're done, peel of the skin. But the potatoes into smaller pieces, and add 60 grams of butter, 2 dl of cream, and mash it together. Add pepper and salt, and fresh, cut parsley. Boil water, and add the fennel. It should be cut in two. Let it boil for one minute, then take it out. Let it cool down a bit, and then chop it into small pieces. ( about 1*1cm) add the fennel to the potato mash. Super good! It gives the mash some texure, and it tastes amazing. Then chop carrots, paprika, onions and cherry tomatoes, add some oil, and put them in the oven with the meat. For the baked onions, you should use shallot onions. simply bury the onions in a lot of sea salt. Add a fair amount of oil, about 1 dl. put them in the oven. They taste amazing. If the skin of the onions look burned, be calm, they're fine! They wont taste strong at all when they're done. Just really good, almost a bit sweet actually.:) Then, for the sauce.. If you are nine people, the best thing is to make a sauce this way: melt 30 grams of butter in a pot. Then add four spoons of flour. Let the butter and the flour boil for a while, it removes the flour taste, but be careful if it gets brown, or golden. Then slowly add 3 dl of broth while stirring a lot. If you like spicy food, add fresh chili and garlic. If not, just season it with salt, pepper, a little bit of cummin. Afterwards you should add cream. Taste the sauce, and put cream until you have a nice and balanced flavour. It should not be too salty. Feel the meat with the tip of a spoon, and if it looks done on the outside, it should still have an elastic feeling. If it starts to get hard, take it out! Let the meat rest for five minutes, before you cut it. Add the sauce from the meat into the sauce you made. Serve and be a star! Bon apetite! :)

    Pork loin. Marinate the poin in olive oil and a lot of fresh minced garlic and rosemary. Grill or roast it. For sides, roast some garlic rosemary red potatoes and stir fry some fresh green beans in olive oil infused with garlic and season with just salt and pepper. Seems like a lot of garlic, but it's not...it's a great meal. I've served it for mothers day before and it was great. Other side ideas...bread stuffing and gravy, garlic parmesan roasted brussel sprouts, grilled asparagus spears, mashed potatoes and gravy, cheesy broccoli and cauliflower medly...

    You could make spinach and ricotta cannelloni and serve them with a nice green salad and fresh garlic bread.
