is it safe to cook fish in an oven topped with mayonaise?
I saw a recipe online for oven baked fish and the recipe calls for mayonaise to be spread on the top of the fish. I thought it was unsafe due to salmanella to heat mayo, which is why restaraunts wont put mayo on sandwiches and then warm them up

I have never heard of anything like what you describe. Mayonnaise does not have salmonella. I assume you mean mayo from a jar purchased at the grocery store. Mayo, or things containing mayo should not be left out for any significant time because bacteria will begin to grow but this is true of any food left out. All bacteria is not dangerous----everything you eat has some kind of bacteria in/on it. Our food is not sterile (at least not once it is opened). What state has laws preventing restaurants from warming food that contains mayo? I would choose another restaurant to dine in. I have never cooked salmon w mayo but I have a chicken recipe that I bake & it is coated in mayo, parmesan cheese & bread crumbs.

It is unsafe to leave foods that are made with mayonnaise, such as sandwiches and pasta or potato salads etc. sitting on the counter for hours. Those foods can develop bacteria. However, cooking with mayonnaise is perfectly safe. One of my favorite way of cooking fish fillets like tilapia and flounder is to spread a thin layer of mayo on the fish and mix bread crumbs with some parmigiana cheese; then add a layer of the crumb mixture on top of the mayo. The fish is baked in a preheated 375 degree F. oven for 20 minutes.

That's how I always cook fish filet's and it's never made me ill.
Actually mayo has vinegar in it which helps prevent salmonella from growing on foods. The only way I will eat a sandwich is with mayo'

Mayo is perfectly safe to put on top of fish and many restaurants warm mayonnaise up. It is perfectly safe. I make a parmesan encrusted chicken that involves mayo and it's delicious and I've never gotten sick from it.

Why is your oven topped with mayonnaise? Why do you imagine it wouldn't be safe?And how pray tell would you get salmonella from cooked mayo?

Mayonnaise is often added when breading fish, for example.
Or in a sauce.
As long as the fish is cooked, there should not b a problem. :)
If you are making a sauce, wait for the fish to cool first, and then add to it.

It is perfectly safe to cook fish like you mentioned.
Consume within 12 hours if kept at room temperature.

Mayo is fine warmed up if it is going to be eaten right away. You don't want mayo that has been sitting out warm though.

I wouldn't. You can eat hot mayonaise, if you're a woman, but it's not good for men.
