Could I get an opinion on dish colour combinations? Can't make up my mind...?

Fiestaware is meant to be mixed and matched, that is why it comes in so many colors. I personally like the colors cobalt and lapis together and tangerine as an accent color. Those three look good to me, as does your combination. I am a big fan of vibrant colors together. Check your kitchen's color scheme though, if you plan on having your fiestaware out where it can be seen you may want to have the colors coordinate or it will look wrong. If your kitchen is neutral than go crazy and mix and match to your heart's content.

My question is, would it be best just to get one colour or a few colours that coordinate with each other?

I love the paprika and sunflower . I think the lapis is a little flat and maybe too dark to go with the other two.

Multi-color is really nice, particularly in a 5 piece place setting like in the picture. Were you to go to 6 pieces (smaller picture), I'd do 3, 2, and 1, not 2 ,2, and 2 like they show in the picture. That gets a little over the top.

I would go with multiple colors. The ones you have picked work well.
