How compatible are these birth charts?
Me - Sun in Taurus, Moon in Taurus, Venus in Gemini, Mercury in Gemini, Mars in Aries, Gemini Ascendant.
Him - Sun in Gemini, Moon in Scorpio, Venus in Gemini, Mars in Taurus. (Not sure of Rising Sign)

You see .. you haven't given us the right information to answer your question.
Those are not charts .. charts are the circle maps of the heavens, with all the symbols in it .. about 40-60 factors, all in all. You have given us ONLY the sign placements of half the planets, and the Rising sign. Far short of the whole story.
Also, no real astrology compares signs to determine compatibility. Only those writing for strangers .. they are focused on making money (from the publisher/website) and not on following actual astrological techniques. Nor do their answers actually work out in real life. It's a scam. Sadly, there are enough writers who care more about money than giving accurate information. Astrological organizations have their members sign an oath of ethics, but joining an organization is not a requirement for writing about astrology .. or for putting up a website.
Astrologers do up two timed birth charts (you have your time .. you do not have his). And then they look for the "aspects" between the two charts. Aspects show HOW you get along with someone. The signs only show a general style, but since people need to be somewhat different in order to get along, having planets in different signs is not a problem.
What IS a problem is when there are mostly square and oppositions aspects (the square is a distance of about 90 degrees between two planets, and the opposition aspects are a distance of about 180 degrees). Therefore you have to know the degree of the sign, not just the sign, for ALL 10 planets. The outer planets (the ones you didn't list) can cause HUGE trouble if they make a square or opposition to the other person's inner planets (the ones you did list). Enough trouble that even the good aspects will end up being torn apart.
Another thing that astrologers look at is to see if one person has their Sun or Moon or Venus or Mars in a conjunct aspect (within 8 degrees) to the other person's Ascendant or Descendant (exactly opposite the Ascendant). Unless this type of contact happens between the two charts, there is not a strong enough bond to keep the two of them together after the infatuation period (2-3 years, maximum) dies out.
Yes you have a Gemini Ascendant. But unless his Sun or Venus is within 8 degrees of your Ascendant, that bond is not there.
Maybe he has his Asc/Desc conjunct your Sun or Moon or Venus or Mars.
We really need to see the whole sign.

I know you are just doing it out of curiosity . but an invalid, incorrect answer (which is what comparing signs will give you) is worse than no information at all.
