If Moses was from God, why were some of Psalms not in the Torah?
And why did they take David's work out of the Torah?

NONE of the psalms are in the Torah nor were they ever in the Torah. All the Psalms were written by King David and have always been found in the least holy section of the Tanakh, Ketuvim, since King David was not a prophet though he was divinely inspired.
So, nothing was taken out of the Torah, Psalms were never removed from anything, Moses had nothing to do with the Psalms. Yes, I know many Christians try to elevate Psalms to the same status as the Torah in an attempt to justify their misinterpretations and altering of Judaism- Jews will stick to the original hierarchy in which the Torah is supreme and everything else in the tAnakh must be understood according to the Torah, not the other way around!

Youre getting confused about the various books involved
The Torah is "the Five Books of Moses"
"Psalms" is a different book altogether
Psalms includes the work of ten poets though the first compilation was by David
The final compilation of Psalms was done at the time of Ezrah and includes some that were done at the time of the Babylonian exile.

The Torah was written about 500 years before David was born.
I think you are confused on some issue.

The Torah refers to the Pentateuch (the first 5 books of the Bible). The Psalms is a part of the Writings. The Psalms is a part of the Tanakh (the Jewish Old Testament).
The Tanakh has 3 parts:
Torah (ת×ר×)
Nevi'im (Prophets) (× ×××××)
Ketuvim (Writings) (×ת××××).

I suppose a Jewish person could answer why some of the Psalms are not in the Torah, but the reason that David's work was taken out of the Torah, could be because David was in the line of Jesus Christ and the Jews do not recognize His deity . God Bless.

I don't know, but man shall not live by bread alone but by EVERY Word that proceeds out of the mouth of God. God has not finished speaking, but His voice is as loud now as in the days of Moses.
