Simple dessert without nuts or chocolate?
I'm making healthy treat bars for my coworkers this weekend. I have a recipe that sounds good but it has too much stuff my one friend is allergic to, so I wanted to make something different for him. He likes marshmallow, strawberry and oatmeal, if that helps.

Easy, no bake oatmeal, strawberry marshmallow treat bars. Make them like Rice Krispy treats, but with oatmeal and dried strawberries. SWEET.

Fruit desserts are wonderful! They're healthy AND delicious! Here's a few of my faves : Avocado "Drizzle" You'll need : A ripe avocado for each person Condensed milk Strawberries *optional* Powdered sugar *optional* Crushed ice *optional* Mint leaves for garnish *optional* Take an avocado, cut it in half lengthwise and remove the pit. Take out bits of the avocado that don't look very pleasing. Then drizzle some condensed milk and a light sprinkle of powdered sugar. You may add crushed ice and fresh strawberries in the "hole" of each half. Garnish with a mint leaf. "Applenutbutter" Crunchies You'll need : An apple (Granny Smiths work best because they're tart, but any kind will do) Peanut butter *Marshmallows* *Chocolate Chips* *Chocolate Chunks* *Toasted nuts* *ALL OPTIONAL* Slice and core the apple, you may peel it if you like, then dip each slice halfway into the peanut butter and roll it in the toppings. Arrange on a small platter. This must be served immediately because the apple slices won't look very appetizing when they turn brown. Strawberry Parfait You'll need : Strawberries A small sponge cake (or any bread that's spongey) Cool Whip Chocolate syrup *optional* Cut the strawberries in halves. Slice the cake into small squares. Arrange the ingredients into a deep martini glass or an ice cream glass in this order : Cake Strawberries Cool Whip Hopefully the top layer will be Cool Whip. If not, pipe, or just put a dollop of it, on top. Drizzle some chocolate syrup or dust with some powdered sugar. Chocolate-Coated Strawberries You'll need : Fresh strawberries Chocolate bars/chunks/chips (I find that dark works best for this) Butter, about 5 or 6 tablespoons Melt the butter and chocolate in a double boiler over simmering water. Wash the strawberries well. Once the chocolate has melted, pour it into a small bowl, one that can be used to put at the table during dinner time. Put the strawberries into another bowl, and serve. You'll enjoy seeing your guests dip their strawberries into the chocolate and have chocolate fingers!

Strawberry Oatmeal Bars:
1 3/4 cubes butter, cold, cut into pieces
1 1/2 cups all purpose flour
1 1/2 cups oatmeal (quick or regular)
1 cup packed brown sugar
1 tsp baking powder
1/4 tsp salt
1 jar strawberry preserves
Mix together the flour, oats, brown sugar, baking powder, and salt. Cut in cold butter until it resembles coarse crumbs. Butter a 9 x 13 baking dish and press half of the mixture in the bottom of it. Spread with strawberry jam and sprinkle with remaining crumbs. Pat gently. Bake at 350 degrees for 30-40 minutes or until golden.
You might also consider making cornflake krispie treats and add dried strawberries or strawberry flavored dried cranberries and chocolate chips.

I don't know many recipes, but Bryan's Peanut Butter Fudge rocks...
-3 cups white sugar or brown sugar
-1/2 cup whole milk (mix both and stir)
Boil around 3 minutes (or test with "softball stage test" by dripping in a cup of water to see if the drop solidifies to see if it is ready). Take off heat, stirring.
-2/3 jar of peanut butter or creamy peanut butter
-1 teaspoon Adam's Vanilla Extract (mix)
Pour and stir and pour out on a plate or platter and let stand 5 minutes. Cut into blocks. Serve.

Melt together butter and golden syrup, then stir loads of oats into it, wait till it sets, slice into bars and voila! You have flapjacks.

You can use different cake mixes and pie fillings.
I've used spice cake and apple pie filling.
