I have some games that I am willing to sell because I need some quick cash to buy something. Can I just go to gamestop and sell them for a few bucks? Do they always take your games or what?

They usually will take any 360 game, but be prepared to get a quarter or dime for some of the games if they are really old. You get 20% less trade in value if you want cash.
