What are some easy to prepare dishes that are healthy?

My bf and I are almost always working, so rarely want to cook. We end up not eating too healthy because of that and I'm gaining pounds. So any good recipes out there? Also love baking! So any cookies or pastries also welcome!

If you have a Crock-Pot or other slow cooker, you can get a meal ready tonight, put it in the slow cooker, and put that in the fridge. In the morning, just take it out, plug it in, and turn it to Low. When you come home, your dinner will be ready and waiting -- and there's almost nothing you can't cook in a Crock-Pot!
