BBQ Burner question., Can I set a pie-pan full of water directly on a burner?

My recipe requires me to put a cheap pie-pan of water over my GAS BBQ Burner while it's set on high. Wont that melt the pie-pan? I'm trying a new way for cooking chicken.

I have seen several recipes that require something on the burner below the Grate and I haven't tried them.

Thanks.

Even a disposable aluminum pan filled with water should be fine on a bbq burner, so your cheap pie pan should be also.

That sounds like a Braise. This is where you take a tough piece of meat and cook for hours in a wet environment. But you usually have to seal the meat and the water in the same pan with foil or a heavy lid.

Water will moisten the chicken skin and make the skin rubbery and reduce the ability to brown. Brown chicken skin is one of the goals.

I am not sure I would trust this recipe.

But a metal pie pan (not disposable alumimum) should be fine.

If the recipe instructions say you can do it then the aluminum ones will be best to try with. I have some antique steel ones that I would hate to sacrifice to the BBQ Gods!!
