What should I make with cooked chicken breasts?

I have two cooked chicken breasts and am looking for a nice meal to make with them. It has been a long week and I'm short on ideas. I just made enchiladas last night so I don't want anything like that. I would like some ideas please. Thanks! :)

    Chicken Salad sandwiches but add some dried cranberries and a hand full of pecans.

    If you do not want to go the cold chicken salad route then..

    BBQ chicken sandwiches.

    Add some of your favorite BBQ sauce to a sauce pan. Add the chicken and put the lid on the pot and let it cook very slowly so the chicken absorbs some of the sauce. You can add a bit of water to help keep it from getting dried out or the BBQ sauce from burning. Then lift the lid for a bit to evaporate off some of the excess moisture.

    Shred the chicken and serve on soft rolls or bread with more sauce.

    Another

    Chicken chili or chicken soup. If your temperatures are anything like where I am a bowl of chili or soup would be perfect for dinner tonight.

    Make a salad! Have lettuce and any veggies you want, with maybe some croutons, then top with chicken and salad dressing!

    Or create americanized 'teriyaki' chicken by making a sauce of a half cup of soy sauce and a half cup of brown sugar and get it boiling. Add ginger if desired. You can actually stop right here, or dissolve a spoonful of cornstarch in two tablespoons cold water and add to the sauce. Let it sit to cool and thicken for about 5 minutes and then dip chicken in the sauce.

    Or simply cut up and toss with barbecue sauce for barbecue chicken!

    I love to cook chicken breasts in advance and keep them on hand for quick dinners. You can do so much with chicken for an easy dinner. Some of our family favorites are listed below. Hopefully the list gives you some ideas!

    bacon and cheddar cheese chicken sandwiches

    honey mustard chicken wraps

    barbecue chicken

    chicken chili

    chicken salad sandwiches

    buffalo chicken macaroni and cheese

    taco chicken bake

    chicken and cheese flatbread

    spinach and cheese stuffed chicken breasts

    chicken and waffles

    chicken parmesan

    chicken alfredo

    chicken corn or chicken noodle soup

    Well what about a salad ? You can spice it up maybe chop some greenpeppers up they are high in calcium and add some Flavour , maybe put some olives in with it and a nice greek dressing or make it yourself with a little mayo and olive oil "shred the chicken " you can also add Caramelised Onions...

    pick your favs:

    honey mustard chicken:

    - 1 cup honey

    - 2 tbsp mustard

    mix & pour or spread on chicken.

    BBQ chicken:

    - 1 cup ketchup

    - 1 cup soy sauce

    - 1/2 cup honey

    - 1/4 cup oil

    mix & pour or spread on chicken.

    apricot chicken:

    - 1/2 cup apricot jam

    - 1/4 cup oil

    - 1/4 cup honey

    mix & pour or spread on chicken.

    lemon chicken:

    - 1 cup lemon juice

    - 1/2 cup oil

    - 1/2 cup honey

    mix & pour or spread on chicken.

    breaded chicken:

    - 1 egg

    - 2 cups breadcrumbs (optional: season breadcrumbs with garlic & onion powder)

    coat chicken in egg. roll in breadcrumbs. bake for 2 hrs until crunchy & golden brown.

    chicken noodle dish:

    - 1 onion

    - 2 cloves garlic

    - chicken cut into cubes or slices

    - 1 box of noodles (any shape & size you want)

    sautee onion, garlic, & chicken chunks in same pot until cooked. cook noodles in separate pot. strain noodles & put into pot with veggies & chicken. mix so noodles soak up all the flavors.
