The game will be available on September 17th and on PS3 and Xbox 360 as announced months ago by Rockstar.
This Asset leak is because PSN (PlayStation Network) didn't want to crash on release date due to huge numbers of people downloading the entire game which is several gigabytes. To stop this, they let European users download Assets, small game files that contain game data but cannot play the game without authorization from Rockstar and some small downloads. Hackers got into these Assets and found information like soundtrack and some video data, but this will not affect the games release date and Rockstar have deeply apologised along with Sony.

Looks like a late September release:
Sony apologized for a leak of Grand Theft Auto V assets yesterday. The leak included details on the open-world game’s main theme and soundtrack.
“We sincerely apologize to Rockstar and GTA fans across the world who were exposed to the spoiler content,” Sony said on the official PlayStation blog.
A digital file of the title inadvertently became available through the European version of the PlayStation Store to those who had preordered the release. Gamers hungrily mined the details. Now, many spoilers regarding Rockstar Games’ latest GTA entry are available on the Web.
Sony said, “Regrettably, some people who downloaded the digital pre-order of Grand Theft Auto V through the PlayStation Store in Europe were able to access certain GTA V assets. These assets were posted online. We have since removed the digital pre-order file from the PlayStation Store in Europe. We sincerely apologize to Rockstar and GTA fans across the world who were exposed to the spoiler content. GTA V is one of the most highly anticipated games of the year with a very passionate following, and we’re looking forward to a historic launch on September 17.”
Grand Theft Auto V could sell 20 million copies in Take-Two Interactive’s fiscal 2014 year ending March 31, according to analyst Colin Sebastian at Baird Equity Research.
