Under the Hindu Succession Act in India, can I prevent one of my sons from inheriting property after my death?
Also, is there any document I can execute which says that I am not responsible for any commitments of any of my sons/daughters they have made to anyone else after reaching the age of 21?

Firstly you are not responsible for any financial commitment or otherwise made on behalf of your children up to the age of their majority which is 18 years, there is no need of any documentation refuting your responsibility for this it is statutory that everyone who has attained the age of majority will be responsible for his/her contractual commitment.
As far disinheriting your child of your inheritable property is concerned for that a written Will made, signed and witnessed is good enough document you can prepare, you may even register the Will with sub-registrar of your district.
You are of fit mental condition while making such Will can be certified a medical doctor that too can be attached with the Will for future reference by the beneficiaries named in the Will at the time of probating the Will from the civil court for executing it after your death.
The provision of Hindu Succession Act,1956 will apply to inheritance of your property to your heirs only if your die intestate, namely without making any testamentary document such as the Will with regard to your properties if you make a Will than that will operate and becomes valid way of distribution of your properties to all the named beneficiaries irrespective of their relationship with you and if you name any heir (son or daughter) not to get share in your properties that will be done as it is part of your intention and will with regard to distribution of your properties after your death.

You can make your will specifying the sons who will inherit your property.Get it registered.
