Suggestions for healthy party food?

We are planning on throwing a small "NFL Opening Weekend" party this weekend coming and I'm looking for some healthy (ish) recipes for it.

There will probably be about 6-8 of us, so not too many. I don't want to do the usual pizza/fried chicken/beige pastry offerings that normally show up at parties.

What's your favourite (healthy) party recipe?

    I can help you make a nepali dish..It must be a new taste but is simple to make.........It might look a bit long but its quick

    Normal nepali dish....

    For rice:

    Requirements:

    1.rice

    2.water

    3.rice cooker

    Steam few cups(According to the number of people)of rice with water(double cup than the rice) in your rice cooker.

    For pulse:

    Requirements:

    1.pulse

    2.oil

    3.salt

    4.turmeric powder

    5.spices(cumin seeds,carom/thymol seeds and Fenugreek seeds)

    6.sliced onion

    7.garlic

    8.water

    1.Take few cups of pulse(any-but less than rice),wash them properly,

    2.Take your pressure cooker and heat some oil(sunflower/mustard/soybean)

    3.Add some cumin seeds,carom/thymol seeds and Fenugreek seeds and fry them

    4.Add some sliced onion,garlic fry them

    5.Add turmeric powder about 2-3 tea spoons

    6.Add about half pressure cooker of water(For 3 small cups of pulses)

    For curry:

    Curry 1

    Requirement:

    1.Sliced Chicken

    2.oil

    3.Sliced garlic and onion

    4.Spices as on pulse

    5.salt

    6.turmeric powder

    7.Meat spices(if available on market)

    1.Take a pan and add some oil(sunflower/mustard/soybean)-make sure the fire is small in your stove

    2.Add some cumin seeds,carom/thymol seeds and Fenugreek seeds and fry them

    3.Add some sliced onion,garlic,salt,chilli,turmeric powder fry them

    4.Add some chicken and mix it with the mixture in your pan

    5.Cover it for at least 10 min..don't increase the fire in your stove

    Curry 2

    1.Spinach

    2.oil

    3.Spices

    4.sliced onion and garlic

    5.Salt

    6.Turmeric powder

    1.Take a pan and add some oil(sunflower/mustard/soybean)-make sure the fire is small in your stove

    2.Add some sliced onion,garlic,salt,turmeric powder,sliced chilli(if required)

    3.Add some of sliced spinach.

    4.Mix wit the mixture on the pan.

    5.Cover it for around 5-10 min

    Pickle:

    1.Tomatoes

    2.Mint leaves

    3.salt and chilli

    4.water

    1.Take few tomatoes and mint leaves.

    2.Boil the tomato until its semi solid.

    3.Take out the peel.

    4.Take your grinder and put the tomato and sliced mint leaves.

    5.Add salt,sliced green-redchilli.

    6.add half cup of water and grind it.

    Serve quarter full of rice in a plate...Pulse in a bowl...Curry2 on one side of the rice plate,curry1 on a small plate and pickle on side of the rice...

    I will suggest you a great dish

    Warm Spinach and Artichoke Dip

    Ingredients

    1 tablespoon canola oil

    1 medium onion, finely chopped (about 1 1/2 cups)

    3 cloves garlic

    1 (9-ounce) package artichoke hearts, defrosted, rinsed and dried

    1 (10-ounce) package frozen chopped spinach, defrosted, excess liquid squeezed out.

    1/2 cup reduced fat sour cream

    2 tablespoons mayonnaise

    1/2 cup (4 ounces) Neufchatel cheese (reduced-fat cream cheese)

    2 ounces (about 1/2 cup) shredded part-skim mozzarella cheese

    1/2 teaspoon salt

    1/4 teaspoon fresh ground pepper

    Pita wedges or crudites, for serving

    Directions

    Preheat oven to 375 degrees F.

    Heat the oil in a saute pan over medium heat. Add onions and cook stirring occasionally, 4 to 5 minutes. Add garlic and cook an additional 3 to 4 minutes, or until onions are light golden but not browned. Remove from heat and cool.

    In the bowl of a food processor combine artichoke hearts, spinach, sour cream, mayonnaise, Neufchatel, mozzarella and salt and pepper. Process until smooth. Add cooled onion-garlic mixture to the food processor and pulse a few times to combine.

    Transfer mixture into an 8-inch glass square baking dish or 9-inch glass pie plate which has been lightly sprayed with cooking spray. Bake for 15 to 20 minutes or until heated through. Serve with pita wedges or crudites.

    I like to take a layered taco dip with low fat tortilla chips. Just mix together 2 cans of Frito Lay Bean Dip, 1 cup fat free sour cream, 1/2 pkg low sodium taco seasoning mix, and 1/4 cup fat free mayo. Put that on the bottom of a 9/13 baking dish. Layer 1/2 chopped onion, 1 small can sliced black olives, 1 small can chopped green chilies, 1 chopped tomato, and 3 cups shredded low fat cheddar/cheddar mix cheese. This has been one of my go to recipes for years.

    Fruit and cheese platters, veggie and cheese platters, cheese and deli meat platters, and a huge variety of crackers or deli breads cut extremely thin. Dips to match the platters of foods.

    I hate cooking for holiday events! I would much rather buy the platters of food then sit and enjoy the party with everyone else!

    Set out veggies and fruit with lo cal dips.

    Make some lo cal brownies or cupcakes.

    If you have a crock pot you could do taco meat in that and then do soft/hard shells, bowls of lettuce, tomato, cheese, salsa, s cream.

    I love this non-traditional chili made with canned tomatillos, green chilies and white beans. It goes together quickly, can be prepared in advance and leftovers freeze beautifully. You can reheat the chili in a crock pot and just keep it warm during your party.The optional toppings add fresh color and bright flavor or you can serve the toppings in separate bowls and everyone can fill their own tacos. You can also add brown or white rice to make this recipe go further. I like to add a green salad garnished with toasted walnuts or pecans, dried cranberries and low fat crumbled goat cheese.

    For appetizers, serve crosstown ( toasted Italian or French bread slices) with different toppings.

    1. Mash up or process a can of cannelloni beans in your food processor, add little olive then mix with chopped arugula.

    2. Chop up fresh tomatoes or use a can of drained diced tomatoes. Toss with chopped onion and chopped fresh basil, cilantro or parsley.

    3. Mash up a can of tuna with lemon juice and olive oil. Mix in rinsed capers and chopped fresh parsley.

    The above toppings can be prepared hours in advance but mix in the chopped fresh herbs shortly before serving.

    WHITE TURKEY CHILI

    Serves 6 to 8

    Yield: 6-8 servings

    Ingredients

    1 1/2 tablespoons olive oil, divided

    2 pounds ground turkey breast

    1 green bell pepper, cored, seeded and chopped

    1 medium yellow onion, chopped

    1 teaspoon ground coriander

    2 tablespoons ground cumin

    1 teaspoon dried oregano

    1/2 teaspoon salt

    1 bay leaf

    1 (28-ounce) can tomatillos, drained and chopped

    1 (4-ounce) can diced green chiles, drained

    1 small jalapeño, seeded and finely sliced

    2 cups low-sodium chicken broth

    3 cups cooked Great Northern beans, drained

    Chopped cilantro, for garnish (optional)

    7 teaspoons grated Monterey Jack cheese, for garnish (optional)

    7 teaspoons sour cream, for garnish (optional)

    Method

    Heat 1/2 tablespoon of the oil in a large pot over medium high heat. Add turkey and cook, stirring often, until browned. Transfer to a bowl and return pot to heat. Add remaining 1 tablespoon oil, bell pepper and onion and cook until softened and golden brown. Return turkey to pot and add coriander, cumin, oregano and salt. Stir well to combine. Add bay leaf, tomatillos, chiles, jalapeños and broth, reduce heat and simmer, uncovered, 45 to 50 minutes. Gently stir in beans and cook for 30 minutes more. Stir in cilantro, ladle chili into bowls and garnish with cheese and sour cream, if you like.
