In the movie, did Sonam know all along from the time she met Abhay that he was a Hindu? If she did know, then why did she act so surprised and cut her wrist when Dhanush revealed the truth during the wedding?

Yes, she did and the irony was that after scolding Dhanush for trying to cut his wrist, she herself did the same.

Sonam knows Abhay is Hindu.She acts surprised on Dhanush's revelation because she had planned to confess about Abhay's true identity after the marriage,not before.She cuts her wrist because she wouldn't be marrying Abhay.
Remember the earlier scene before nazar laye song while she is seated behind Dhanush in the scooter as she is narrating about her past,she says,"main jaan de doongi agar usse shadi nahi hui to"
That's what she tries to do by cutting off her wrist when it turns out that she can't marry Abhay.

yes she knew well that Abhay is hindu but she do not tell her parents because after knowing that they would not make her marriage with Abhay

she knew that from the beginning but she decided to tell abt him to her family after NIKAH
