My sweet pickles are sour and my sour pickles are sweet. What do I do?

I can my own foodstuffs. Recently I have run into this problem. Canning another batch doesn't change anything. My sweet pickles turn out sour and my sour pickles turn out sweet.

I am at a loss. What do I do?

    I have made pickles for 30+ years and never had that problem but I have made some recipes that were better than others so for a long time now I stick to the ones we like best.

    If your sour pickles--dills?-- are sweet you are adding sugar and you shouldn't be.

    If your sweet pickles are sour then you are not adding enough sugar. Most of my sweet pickles call for equal portions of vinegar and sugar.

    If yours are not made as I stated I think you need to look for new recipes.

    I found the best canning books are put out by the makers of canning jars. The Bernardin book(Canadian) is my go to book for recipes for canning. In the states there is the "Ball" recipe book. I haven't read it but if it's anything like the Bernardin book it will be the best canning book. They are well worth the small price they charge and you can order them on line

    sounds like you can't tell sugar from salt
