I want to use up sauerkraut?

I need ideas for sauerkraut! Must be meat-free and gluten-free. TIA!

    You can wrap sauerkraut in gyoza or wonton wrapper, then deep fried even baked. You can wrap sauerkraut in spring rolls wrapper even tortilla wrap either deep fried or pan fried the tortilla on both sides till brown. The Chinese has a sauerkraut vegetarian dumpling or bao or you can buy premade Chinese buns even pita bread which you can fill it with sauerkraut and steam even baked. Or make Chinese "chang" in bamboo leaves or lotus leaves wrap. Fill the leaf with glutinuous rice, with sauerkraut as fillings, cover tightly with the sticky rice, wrapped and use strings to hold tight the leaves, then steamed till the rice is cooked. You can make mochi with sauerkraut as fillings and several other Chinese vegetarian pancake and crepe with sauerkraut as fillings *

    I happen to love saurkraut and serve it in the following ways:

    1. In the crockpot with some diced apples and brown sugar (along with smoked sausage or kielbasa)

    2. In a "reuben", both vegetarian and with pastrami. If you need gluten free, see if you can find some gluten free bread to enjoy this sandwich.

    3. Western style kim chee

    4. There's also a chocolate cake recipe that includes saurkraut. Sorry, I don't have the recipe, but you can google it.

    5. As an alternative flavor in smoked ham and cheese quiche

    6. Added to pork stew, along with potatos, cannelini beans, greens

    7. You might also consider off-setting the sour flavor, by adding brown sugar to it and serve it with a peanut butter and sliced apple sandwich

    8. Add to roasted potatos with butter and caraway.

    I like it warmed up with a two or three pints of Warsteiner Dunkel.

    I was going to suggest grilled Reubens but you said meatless and gluten free, hmm you could use gluten free bread, and vegetarian bacon to make a new reuben.
