Good diet for hamster?

He's right now on Kaytee Forti-diet pellets with a little bit of a seed mix and a sunflower seed or two as a treat daily, and he's on track (possibly a bit under) with his weight. He's around 9 months old, and is a male Syrian hamster of medium to high activity. (He runs all night, but before 11 or so he'll cuddle too.) I'd like to switch permanently to a part pellet part seed mix diet, and I had a few questions.

1) How much seed mix and how many pellets should I give him daily?

2) What's a good seed mix? I'll check it before I buy it; I just wanted a few brand suggestions.

3) Do you think this is a good idea?

4) If no, how many pellets should I feed him a day?

He's right now on a very irregular diet as I'm unable to figure out just how much he eats in a day- sometimes I see huge piles of uneaten food, and sometimes I just see an empty bowl. He does not overeat; he knows how much he needs, so I try to feed him enough that he'll always have plenty, but I'd like a specified amount to feed him each day.

Oh, and possibly a small (very small) piece of a fruit or a vegetable (carrot, apple, or grape- he's had grapes before with no issues; the other two he hasn't had yet) every day or every other day?

    Harry/Hazel hamster is good as a base. You can add mixed dried herbs, like the ones the brand Burgess do (I recommend mountain meadow herbs). You can also get dried carrots/parsnips and more to mix in. Also some mealworms for protein (I'd say no more than one a day, so monitor what is put in the food bowl)

    I give my little one a small piece of fruit or veg every 3 days or so, you don't want to give them too much to avoid the dreaded wet tail. (I see some people giving them a whole slice of apple, and have always thought it a bad idea. Better to be a very small piece a bit more often)

    Some people think it's a good idea to have a 'starvation day' where the food bowl is empty and the hamster has to go round and collect any hoards. This is also good if there are a few things in the bowl they normally don't like, as they have to eat it and it means their diet is that bit more balanced (Hammys usually go for the fatty options first like sunflower seeds)
