What cake for a bake-off at work?
As part of an event that's been organised at work, one of the competitions is to have a baking competition. It can be anything - sweet, savoury, spicy, sharp... whatever, as long as it's BAKED. I'm not sure what the prize is - if there even is one, but hey - it's worth a try, no?
So I've decided to bake a cake for it. My repertoire is limited and my skills not much better (although I've not had any major disasters yet and I'm happy to try something different).
If you were judging the competition, what would you like to see? (and provide a recipe if possible, remembering the limitations above. I may even send you a piece :)

Crust
1box Pillsbury® refrigerated pie crusts, softened as directed on box
Filling
3 oz Hershey's® unsweetened chocolate, cut into pieces
1 cup LAND O LAKES® Butter, softened (do not use margarine)
1 cup sugar
1/2 teaspoon vanilla
4 pasteurized eggs
Topping
1/2 cup sweetened whipped cream
Chocolate curls, if desired
Steps
1Heat oven to 450°F. Make pie crust as directed on box for One-Crust Baked Shell, using 9-inch glass pie plate. Bake 9 to 11 minutes or until light golden brown. Cool completely, about 30 minutes.
2In 1-quart saucepan, melt chocolate over low heat; cool. In small bowl with electric mixer, beat butter on medium speed until fluffy. Gradually beat in sugar until light and fluffy. Beat in cooled chocolate and vanilla until well blended.
3Add eggs 1 at a time, beating on high speed 2 minutes after each addition; beat until mixture is smooth and fluffy. Pour into cooled baked shell. Refrigerate at least 2 hours before serving. Garnish with whipped cream and chocolate curls. Cover and refrigerate any remaining pie.

Here's one of my most sought after cakes:
Jennys Glazed Banana Cake:
1 box yellow cake mix, plus eggs, oil and water for mix
3 very ripe bananas
1 cup coarsely chopped candied walnuts
1 tsp vanilla
Mix cake together according to package directions, adding vanilla and bananas. Fold in nuts and bake in a prepared bundt cake pan until golden and top springs back. Let sit for 15 minutes and turn out on serving dish.
Glaze:
1 3oz package softened cream cheese
1 cup white chocolate chips, melted
1 tsp vanilla
1 cup powdered sugar
3 + T heavy cream
Blend above ingredients together to make glaze. If too thick, add extra cream. If too thin, add more powdered sugar. Spoon over warm (not hot) cake. Let run down the sides. Sprinkle with additional chopped candied walnuts for garnish if desired.

Condensed Milk Brownie Pie
This beautiful dessert is a showoff! Plus it is super easy and creates a scrumptious and chewy brownie pie that will beg to be made again and again.
6oz. Hershey's Cookies 'n' Creme Chocolate Candy Bar
½ cup sugar
½ cup butter
Melt over med low heat until melted
Whisk in 2 lightly beaten eggs and ½ teaspoon vanilla
Add:
1 cup flour
½ teaspoon baking powder
pinch of salt
Stir until mixture is incorporated and smooth
Pour into greased 9" springform pan
Bake at 350°, 20 minutes
Remove from oven
Immediately pour 7oz. sweetened condensed milk over top of brownies
Layer with ¾ cup mini semi sweet chocolate chips
Let cool

Since its fall you should do a pumpkin cake with white chocolate frosting
Cake recipe:
1c unsalted butter
1 c sugar
1c brown sugar
4 eggs
1 15 oz can pumpkin
3 c flour
2 tsp baking powder
1/2 tsp baking soda
1 T cinnamon
1 tsp allspice
1 tsp ginger
1/2 tsp clove
1/2 tsp mace
1/4 tsp salt (omit if using salted butter)
3/4 c milk
1/2 c raisins
First boil raisins in milk, let cool.
Preheat oven to 350
Line 3 8" cake pans with parchment
Beat butters and sugars, add eggs, pumpkin.
Sift together flour, powder, soda, spices and salt, three times. Then add to seperate large mixing bowl
Slowly add butter and egg mixture to dry mixture
Add milk and raisin mixture (you can omit the raisins if you don't like them, i do, but i like the flavor)
Divide batter in 3 pans
Bake 15-30 minutes, Check for doneness with toothpick.
White chocolate frosting:
2 C unsalted butter
5 c powdered sugar
12oz block white chocolate
1/2 C heavy cream
1/2 tsp vanilla extract
Melt white chocolate over double broiler (i used a mixing bowl over a pot of boiling water)
let cool to room tempurature
Mix powdered sugar and butter until creamy, add white chocolate
Slowly add heavy cream until the frosting reaches your desired consitency.
Add 1/2 tsp vanilla extract
Frost cake and sprinkle cinnamon and granulated sugar over it.

Use half cup special dark cocoa powder or dutch process cocoa powder.
Use COKE instead of any other soda.
time it about 10 minutes less than called for and check to see if it is pulling away from the pan then check with toothpick.
overbaked chocolate cake is so nasty and dry!!
print out recipe and check off steps as completed and success is guaranteed!
