Do you have any recipe ideas?

ingredients on hand: chicken breast, baby portabellos, jar of roasted red peppers. Cukes, green pepper, onions, mild chedder cheese. I have to eat gluten free.

    Saute the chicken breasts to brown and set aside. Put a little olive oil in a skillet and throw in sliced onion, sliced portabellos, drained, sliced roasted peppers. When these are wilted put the chicken back in and add a splash of white wine (if you have some) OR a little chicken stock (if you have neither, add a little water). Simmer for half hour to 45 minutes. Slice the cukes and green peppers and serve as side salad.

    Jeez- ignore the rude answers. People with no life (and likely few friends...) enjoy being *******s from behind the safety of their computer screen. To those people: grow up already!!!

    As for your question. I would make some brown rice. Then gently cook onions and mushrooms in fat of choice. Chop up the roasted pepper and mix mushroom mix, red pepper, and rice together. Add some chicken stock. (taste and adjust seasoning to your liking) Now put the rice in a baking dish. Brown the chicken breast on each side, season it with salt and pepper. Put on top of the rice. If you have lemon or lime juice, a good douse of that would be good. Bake for 30-40 min until chicken is done.

    Slice up the cukes and green pepper. Add a little onion. Marinate in dressing of choice until the chicken is done for a side dish.

    Make a stuffed chicken breast. Saute the mushrooms and red and green peppers with some onions and garlic. Cut a slit in the breasts and fill with the veggie mixture and some of the cheese. Secure with toothpicks. Brown well on both sides and finish cooking in the oven.

    Shih's is along the lines I'd do except it's 20 minutes, tops. I'd have it hot but a salad is good. You could sauté the green peppers (I'm assuming you mean mild bell peppers) and leave out the red, only use the red, or use both.

    Wow seems as if people on this forum are more interested in being Cyber Bullies instead of giving helpful Hints. Makes me wonder why anyone comes on here at all. I sure won't be back. Is there no moderator?

    I see nothing in your list of ingredients which may have gluten in it.

    if you are so unimaginative as to not be able to find a recipe site on the internet, you are too unintelligent for me to clue you in!
