    Fermentation is the mode of metabolism that microorganisms (and some cells in animals) use in the absence of oxygen.

    Beer and wine--Alcohol fermentation by Saccharomyces (yeast)

    Yogurt--Lactic acid fermentation by Lactobacillus (a bacterium)

    Swiss Cheese--Propionic acid fermentation by Propionibacterium
