Poached seasoned, marinated chicken for Chinese salad?

For Chinese chicken salad i poach and shred the chicken. It is fine out of the salted water but plain until the dressing is added. Is there a simple marinade for the chicken after poaching that is simple but not the salad dressing itself? Can meats marinated prior to poaching effective at all?

    You can brine chicken and pork to make it more tender. But if you are poaching I doubt that a brine will help.

    Season the water you are poaching your chicken in. Salt and pepper a bit of lemon juice and some zest will help. Maybe even a half of an onion and a carrot. any seasonings or herbs can be put into a bit of cheesecloth or a coffee filter, tied up and put that in the poaching water.

    When the chicken comes out of the poaching liquid you can add a bit of the dressing to the warm chicken it will absorb the dressing and flavor the chicken a bit more than it will when the chicken is cold.

    season the water you poach it in with more than just salt.

    Onion, celery, garlic, carrot, bay leaves, fresh cracked pepper, thyme, etc.

    Doing that will give you a chicken broth(the poaching water) you can then use in other applications.
