Here is the issue. Your 1985 Mustang uses a clutch cable and uses a pull system. A pull system uses a Diaphram type clutch pressure plate(vs 3 finger type pp).
The flywheel has to have hole/threads to match the diaphram type pp.
An old 28oz is made to mount the 3 finger type. You can have a machine drill and tap new mounting hole to fit the diaphram type, but I think this is your solution.
http://www.summitracing.com/parts/zzz-50-735/overv... I believe this one is 28oz with diaphram type mounting holes. It is however a 164 tooth ring gear, so you have to find the matching starter or correct mounting position. Double check on these information. Too tired to look further....
Edit: yes use 5.0L bellhousing and hopefully the starter will fit. Don't forget to get and install the pilot bearing/bushing
Edit: You will need a 5.0L oil pan and oil pickup because 302 oil pan is too deep for the rack and pinion.

The flywheels are grouped by 157 or 164-tooth models. The 157-tooth, 28 oz. flywheel should allow you to run the 10-inch pressure plate and clutch disc. http://www.jegs.com/i/McLeod/673/75115/10002/-1
it's going to depend on whether you're running the Torino or Mustang housing. I assumed the Mustang to go with the cable clutch operation.
