Is it safe to eat something I didn't immediately refrigerate?
Specifically, applesauce.
When I opened it, I looked everywhere on the package to see if it needed refrigerating after opening, and didn't find anything. Today, however, I took out the jar to eat some, only THEN to find out that I was supposed to refrigerate it. I opened it two or three days ago and I'm wondering whether it's a smart idea to throw it out.

Better living thru chemistry. Everyone complains and moans about chemicals in food but for the most part they keep you from dying of food poisoning. I know it ain't perfect but think about all the food that DOESN'T cause a problem. I don't refrigerate my salad dressings for instance, never, as I think it spoils the flavor. Still here. But strangely enough, I got food poisoned by ice cream bars many years ago. Yep, I am not lying. I had an ice cream bar and next day was sick as a dog. How do I know the bar were responsible? I was listening to the news and they were talking recall of the bars. So, even freezing doesn't save you from sickness. I was really surprised there as I was spewing.

You probably will be ok with it, but there is a good chance there may be mildew on it or in it, and it will make the applesauce nasty tasting if it is there. It probably wouldn't hurt you to eat it, but who would want to? If it was mine, I would toss it.

Applesauce is still ok, even after the few days ... as long as it doesn't have mold growing on it.

Apple sauce doesnt go bad very easily, it should be fine unless you see mold on it

should be ok, but always use your nose for off odors, then a tiny taste for off flavor.

If it smells good and looks good, it probably is good
